Rôti de sanglier accompagné de frites (4 personnes)
This roast wild boar accompanied by homemade fries will delight young and old alike!
Ingredients:

Preparation :
- Peel 2 to 3 potatoes per person, depending on size, and cut evenly into rectangular fries. Using a cloth, dry the fries.
- Dip them once in the deep fryer (the oil should be 170 degrees) until the fries color, then let them rest for 20 minutes.
- Bathe them a second time in the fryer.
- Drain on paper towels and season with fleur de sel.
- Season the roast wild boar of fine salt and a chopped shallot then cook it in a hot buttered frying pan then adjust to the oven with a slow cooking at low temperature.
- Remove the meat from the oven when it caramelizes and season it with pepper, fleur de sel and other condiments of your choice.
