Venandi wild boar roast / fries

Rôti de sanglier accompagné de frites (4 personnes)

This roast wild boar accompanied by homemade fries will delight young and old alike!

Ingredients:

Preparation :

  1. Peel 2 to 3 potatoes per person, depending on size, and cut evenly into rectangular fries. Using a cloth, dry the fries.
  2. Dip them once in the deep fryer (the oil should be 170 degrees) until the fries color, then let them rest for 20 minutes.
  3. Bathe them a second time in the fryer.
  4. Drain on paper towels and season with fleur de sel.
  5. Season the roast wild boar of fine salt and a chopped shallot then cook it in a hot buttered frying pan then adjust to the oven with a slow cooking at low temperature.
  6. Remove the meat from the oven when it caramelizes and season it with pepper, fleur de sel and other condiments of your choice.
